Stir Fry #1

I have many combinations for quick stir fry dinners. This is one of my favourite combinations.

Zucchini, Carrot, Snow Peas and Broccolini, served on brown rice.

Have these vegetables already cut, then heat up a fry pan with olive oil.

The trick to a good stir fry is to have the fry pan really hot so the veggies soften quickly without losing much moisture and becoming soggy.
Continually toss the vegetables in the fry pan so they don’t burn.
Once the vegetables are semi softened, add the sauce mixture and fry off for 1-2 minutes.

The Sauce:
2 Tbsp soy sauce
1 Tspn garlic oil
1 Tbsp minced garlic
1 Tbsp minced ginger
1 Tbsp lime juice
1 Tspn crushed chili
Shake of all purpose seasoning

Base Chakra to Crown Chakra Meditation

Earlier I posted a 10 minute breathing meditation. I have now created and uploaded a 40 minute meditation track which resonates with the energies aligning with the 7 main Chakras. The meditation starts at the Base Chakra and travels up to the Crown Chakra.
The short silences are an indicator for either Reiki position changes or energy flow changes throughout the meditation. Alternatively you might just like this music in the background and to sit, close your eyes, breath and relax.

 

Rustic Mushrooms, Baked Potato, Salad and Homemade Mayonnaise

This combination was delicious! I coated the mushrooms in bread crumbs, smoked paprika, olive oil and garlic powder. I cooked these in a fry pan with the lid on and once softened, removed the lid to make the coating crispy.
Served with baked potato and a garden salad.

The Homemade Mayonnaise:
1/2 Cup almond milk
1 Tspn garlic powder
Salt and pepper to taste
1/2 an avocado
1 Tbsp of mustard
1 Tbsp of lemon juice
Pulse in a food processor and refrigerate until ready to use

Neapolitan sauce with Penne, Sun-dried Tomatoes, Cherry Tomatoes, Baby Spinach and Mushrooms

There are so many variations on Neapolitan sauce. I change my recipe depending on the ingredients at hand and also how smokey or hot (chili) I want it for a particular dish.
Below is my Neapolitan sauce recipe that I use for penne pasta.

Once the sauce and pasta is cooked, I transfer to a fry pan and add cherry tomatoes, sun-dried tomatoes, baby spinach and mushrooms. I fry this quickly at a high heat to thicken the sauce. Sometimes, if in a rush, I might add a sprinkle of SR flour to make the sauce stick to the pasta.

The Sauce:
12 ripe tomatoes
6-7 cloves of garlic
Small pot of leggos tomato paste
1/2 cup of water
2 1/2 Tbsp of ground or sweet paprika
2 Tspn of all purpose seasoning
1 1/2 Tbsp garlic powder
Salt and Pepper to taste
I cook all ingredients on the stove top on a low heat for 2hrs, stirring occasionally.

Baked Dinner

It was a lovely evening of beautiful friends and beautiful food. The creamy cauliflower and Broccoli bake was a hit!

The Dinner:
* Steamed peas, corn, carrot and beans

* Chick peas cooked in smoked paprika, garlic powder, all spice, olive oil, bread crumbs and minced garlic (add all spices to individual tastes. Cook in a fry pan gently until all igredients mixed together and chick peas sliglhtly spftened)

* Baked Potatoes, red onion and zucchini in olive oil, rosemary and garlic (cook in a hot oven until soft)

* Cauliflower and broccoli in creamy white garlic sauce

Cauliflower and Broccoli Sauce:
1/4 cup of SR flour
1/2 cup of almond milk
1 heaped Tbsp minced garlic
1 heaped Tbsp of nutalex
Mix all ingredients and pour over the bake, cover in foil and baked for 40 minutes at 200 degrees. At the 40 minute mark, pour a splash of water over the bake and add some more garlic and cook for another 10 minutes with foil over the top.

Corn and Zucchini Fritters

Very quick and very tasty!

FRITTERS:
1 medium tin of corn kernels
1 large zucchini – grated and excess water squeezed out
1/2 cup SR flour
1/2 cup bread crumbs
4 Tbsp tomato relish
2 Tbsp minced garlic
Salt and pepper to taste
Combine all ingredients and shape into firm patties.
Once formed, pat with a wet hand and place in fridge for 5 minutes
Cook on medium heat in a fry pan with a generous splash of oil
Pat with paper towel before serving
Serve with potato and salad.

Friday Night Special – Nachos

…from the Friday night special collection! These nachos were absolutely delicious!!

Mash 1 avocado and set aside.
Place 1 tin of 4-bean mix (rinsed) in a fry pan with a little oil.
Add 1 cup of vegetable stock
2 tbsp of tomato paste
2 heaped tbsp of smoked paprika
2 tbsp of all spice
1 tbsp of minced garlic
1 heaped tbsp of Coles gluten free vegan gravy powder. You can also use any other vegan gravy powder.
Heat to thicken and serve!

Super quick – super yummy!

Homemade Vegan Pizza

A rustic gluten free base and toppings with a  full, rich flavour It was delicious!

Pizza Sauce – mix together:
1/2 cup Leggos pizza sauce
1 heaped Tbsp Zaatar
1 Tbsp minced garlic
1 Tbsp olive Oil

Pizza Toppings:
Broccoli – steamed
Zuchinni
Red and green capsicum
Red onion
Cherry tomatoes
Softened in a fry pan with Vegetable Vegeta – then placed on the pizza.
Cook in the oven at 180 (gas fan forced) for 15 – 20 minutes turning occasionally.
